Indian, Side Dish
˝stickbutter or margarine
˝onion (yellow), chopped
1cupsliced mushrooms
5bay leaves
2cupsbasmati rice
2cupschicken soup stock
  1. Melt butter or margarine in a large pan. Once hot, add onions, sliced mushrooms, and bay leaves. Sauté until onions are tender. If onions are finished bleeding and mixture begins to stick, add a little water.
  2. Add 2 cups of rice in sauté mixture. Stir a little, then add soup stock and water. Add a pinch of turmeric, mostly to add color. Bring to a boil and then reduce heat and cover. Periodically check to ensure it isn't burning. Be careful not to stir too much or you will break up rice. If rice begins to stick to the bottom, turn off heat and rice is probably done.

  • Instead of bouillon cubes, try using chicken soup base paste.
