8ounces thin noodles
cupcarrots sliced very thin
cupgreen beans
1tbspminced fresh ginger root
3clovesgarlic, minced
cupsliced mushrooms
cupchicken broth
3tbspsoy sauce
3tbsppeanut butter
1tsphot chili paste (optional)
Sesame Oil to taste
1tbspwhite Vinegar
cupchopped green onions
cupchopped peanuts
  1. Boil the noodles, green beans, and carrots until done. Drain.
  2. While that's cooking put a bit of oil in the bottom of a small sauce pan and heat it up. Fry the white part of the green onions, the ginger, garlic, and mushrooms.
  3. Add the chicken broth, soy sauce, peanut butter, honey, chile paste, vinegar, and sesame oil. Heat until warm.
  4. Spoon sauce over noodles in individual dishes. Garnish with green onions and peanuts.
  5. I served it with a breaded chicken patty sliced into thin strips. I think it would also be yummy with little strips of cucumber on top, or with some other vegetables like peppers.
