1cup(200g) soybeans
2tspgypsum powder
2tsppure almond extract (or 2 tbsp imitation almond extract)
  1. Soak soy beans overnight in an additional liter of water. Drain.
  2. Put about 1 cups of soybeans at a time in a blender; add water (from the 6 cups) so it is about 1" above the beans. Blend at low speed for 30 sec. and high speed for 15 sec. until smooth and frothy. Pour into a large pot lined with cheesecloth (#10). Repeat as necessary.
  3. Gather cloth around the pulp and squeeze the milk into the pan. Use the remaining of the 6 cups of water in the bowl to "wash" the pulp while still in the cloth and squeeze out remaining milk. Combine all milk into the pan.
  4. Remove cup milk and put in a corningware or large glass bowl. Add gypsum powder and almond extract; stir well. Bring milk to a boil over the stove; remove immediately from heat and add sugar. Recombine the gypsum mixture and pour in the boiled milk. DO NOT STIR OR MOVE THE CORNINGWARE!! (or else it won't set properly) It will set in about 15 min.
  5. Syrup: Bring cup water and 1 cup sugar to a boil.
