2cupswarm water
a little salt
  1. Sprinkle yeast into 1 cup warm water; add 1 tsp sugar and let sit for 1/2 hr.
  2. Meanwhile make filling (such as cha siu, but dice the pork).
  3. Mix flour, salt, sugar, shortening, & remaining 1 cup water; add yeast mixture and blend. Knead; add more water if needed. Let rise.
  4. Roll out on floured surface until 1/8" thick and cut out 6 cm circles.
  5. Place 1 tbsp of filling in middle; bunch up at top & twist.
  6. Put each bun on a square of wax paper, and arrange in bamboo steamer.
  7. Steam for 15 min.

  • These are made with yeast, which are a little different than the baking-powder buns you'll find at most Chinese restaurants

    For cha siu bau: 2lb. pork
