1cupsweet long grain rice
1cancoconut milk
  1. Soak the rice overnight (8 hr). Fill the pot halfway with water (don't let the water touch the bottom of the basket when you put it in) and bring it to a boil over the stove. Place the rice in the basket (use it as a strainer) and put it on the pot, covering it with a plate. Steam for about 25 min. After the rice is done, spread it out on a cutting board to let the steam out.
  2. Meanwhile, combine the coconut milk, sugar, & salt and bring to a boil over the stove. Set aside 1/2 cup of the mixture.
  3. Add the rice to the mixture and stir until batter-like. Spread in a 8x8" pan and chill. Serve warm with mango, pouring some of the reserved coconut milk mixture on top.

  • A special rice steaming basket and pot is needed, which can be purchased at most Asian grocery stores

This slightly sweet dessert is popular at Thai restaurants, but is very easy to make yourself
