2cupsallpurpose flour
cupboiling water
cupcold water
t salt
23stalksof green onions, sliced
egg (optional)
cupoil for frying
  1. Combine flour, boiling water, cold water and salt and knead into a smooth dough.
  2. Rinse scallions, air dry and mince. Oil a flat surface and a rolling pin with 1 tsp sesame oil. Place dough on oiled surface. Knead a few times and divide the dough into 5 equal portions. Roll each portion out wide and flat and grease with a layer of butter evenly, then sprinkle on a layer of minced scallion and salt. Roll up into a strip, pinch the ends closed and roll towards each other until the dough is snail-shaped. Press the dough flat and roll into a flat cake.
  3. Heat oil and fry the cakes with lid on until golden on both sides. Remove and cut into sections. Serve. If desired, fry 2 beaten eggs until almost set and then place the cooked pancake on top of the omelet and finish cooking.
