3 tbspOil
2clovesGarlic sliced
1Medium eggplant cut in one inch cubes
1Medium onion cut in wedges
Salt to taste
tspChili powder
tspGaram masala
2tbspCrushed tomatoes
  1. In a saucepan heat the oil and saute garlic slices for a few seconds
  2. Add onions, eggplant, all the spices and water. Mix well
  3. Cover and cook on medium heat until the eggplant is almost cooked
  4. Add crushed tomatoes. Mix well. (Optional: To add protein, sprinkle cup Besan at this point)
  5. Turn heat to low and cook for 3 minutes
  6. Serve with your choice of Indian flatbread.
