Soup
Ingredients
2cupsshredded or diced beets
1cupdiced carrots
1cupdiced onions
cupchopped cabbage
1cancondensed beef broth (10˝oz) plus one can of water
1tbspbutter or margarine
1tbsplemon juice
salt
sour cream (opt.)
Directions
  1. Cook beets, carrots, and chopped onions in 2 2/3 cups boiling salted water for 20 mins. Add stock, cabbage, and butter; cook uncovered for 15 mins. Stir in lemon juice.
  2. Top with a dollop of sour cream if desired; serve.

  • The flavor is more intense with a can of consomme soup rather than regular beef broth.
