3cupsflour (try 2 c. whole wheat and 1 cup white OR 2 cups whole wheat and c. gluten)
1cupwater at room temperature
2tbspolive oil
  1. Put it in the breadmaker and set it to dough. Or find out more here: http://www.thefreshloaf.com/recipes/pitabread
  2. When the dough has doubled in size, start preheating the oven to 400 degrees. Preheat your cooking surface (cookie sheet, baking stone, etc. with the oven.)
  3. Punch the dough down to release some of the trapped gases and divide it into 8 pieces. Roll each piece into a ball, cover the balls with a damp kitchen towel, and let them rest for 20 minutes.
  4. After the dough has relaxed for 20 minutes, spread a little flour on your work surface and grab a dough ball. Sprinkle a little bit of flour on top of the dough and use a rolling pin or your hands to stretch and flatten the dough to about 1/8 to 1/4 inch thick.
  5. Put your pitas on your baking surface, as many as will fit, and bake! They should be done and puffy after 3-5 minutes. Really. 3-5 minutes. Don't second guess them unless you want crispy pita.
