Ingredients
Base:
1cupshortening
1cupbrown sugar, firmly packed
1tspvanilla
2cupsflour
cuprolled oats
Filling:
1can(20 oz) crushed pineapple
1tbspcornstarch
1cupflaked coconut
1tsplemon juice
Directions
  1. Cream shortening, sugar, & vanilla in a large mixer bowl until light & fluffy. Mix in flour until it crumbles. Remove 1 cup of mixture & combine with oats; reserve for topping. Press remaining mixture evenly in 9x13" pan. Bake at 375F for 10 min.
  2. Combine crushed pineapple (incl. juice) and cornstarch in a saucepan. Cook over med heat, stirring constantly until thickened. Stir in coconut & lemon juice. Spread carefully over baked crust. Sprinkle with reserved topping. Bake at 375F for 15-20 min. or until lightly browned.
