Mitt Romney's Carrot Soup<< Back to list

5cupscarrots, peeled and chopped
1cuppotatoes, peeled and chopped
cuponion, chopped
4cupschicken broth
1bay leaf
salt and white pepper to taste
  1. In a large skillet, saute carrots, potatoes and onion in butter 10 min. Cook covered over moderate heat for another 10 min.
  2. Add chicken broth and seasonings and simmer covered for another 45 min or until vegetables are tender.
  3. Puree and transfer to saucepan. Stir in milk and heat.
  4. Pour in bowls and garnish with lightly whipped cream and finely chopped parsley or watercress, if desired.
  5. Can be served cold.
  • This soup is so simple that you can experiment with a lot of different seasonings - or just eat it plain. It's tasty either way.

    If you're in a rush or just don't want to deal with peeling and cutting carrots, dump in 5 cups of baby carrots from a bag and - voila - you're ready!
