1lbchicken breasts, cut into 1-inch pieces
4cupschicken broth
2cupscarrots, peeled and sliced bias-cut
1large onion, chopped
2tbspfresh ginger root, grated
3clovesgarlic, minced
2stalkslemongrass, with the outer parts peeled away and sliced finely
tspcrushed red pepper flakes
15ozcoconut milk
1medium red pepper, diced
1pkgsliced mushrooms
1/3cuproasted peanuts
  1. In a crockpot, add chicken, broth, carrots, onion, ginger, garlic, lemongrass and crushed red pepper. Cook for 6-8 hrs.
  2. 10 mins before serving, add coconut milk, bell pepper and mushrooms. Cover and let stand 10 mins. Sprinkle peanuts on top before serving.
  • The fresher you can get the ingredients, the more scrumptious it will be.

    Don't be intimidated by the lemongrass like I was. You can either find it in the produce section or the freezer section. Here's an easy how-to on preparing it:

    Sidenote: I don't have a food processor or a pestle & mortar for the lemongrass. I just use my food chopper ( That way I can just cut roughly and don't have to spend a half-hour finely slicing them.

Throw everything into a crockpot and - wala! Scrumptiousness.
