2tbspcanola oil
1large sweet onion, sliced
2tspground cumin
3sweet potatoes, peeled and cubed
1quartchicken broth
1cupplain yogurt
2tbspchopped parsley or cilantro
cuptoasted pumpkin seeds
  1. In a soup pot heat oil. Add onions and cumin and saute 3-4 minutes. Add potatoes and chicken broth and bring to a boil. Reduce heat and simmer 20-25 minutes.
  2. Puree soup with 1 1/2 cups plain yogurt and parsley or cilantro. Serve each portion of soup with a dollop of remaining yogurt and a sprinkle of pumpkin seeds.

  • I usually just use 1 TSP of dried parsley or cilantro instead of getting a huge bushel of the fresh stuff (unless I already have it for some reason). I also prefer the parsley over the cilantro.

    The dollop of yogurt at the end with the pumpkin seeds is optional but it is quite tasty with the seeds.

    This recipe is extremely easy to make because you can roughly chop the onions and yams since it will be going into a blender anyway.

Technically, it's yam soup but "sweet potato" sounds better. So easy and delicious - my new favorite soup.
