Ingredients
cupwarm water
2tbspyeast
2cupsscalded milk
cupsugar
cupshortening
2tspsalt
2eggs
6cupsbread flour
Directions
  1. Dissolve yeast in warm water. Set aside.
  2. Combine milk, sugar, shortening, and salt with 3 cups flour. Beat with spoon until smooth. Beat in eggs and dissolved yeast, then add additional flour to make a soft dough. Knead well. Let rise until double (30-45 min).
  3. Shape as desired. Let rise again until double.
  4. Bake dinner rolls at 400F for 10-15 min, fruit-filled sweet rolls at 350F for 25-30 min, and filled sweet rolls (other than fruit-filled) at 375F for 20-30 min. Glaze if desired.

  • to make scalded milk:microwave on high for 2.5 min, then let cool for 5 min
    Glaze: 2 cups powdered sugar, 2 tbsp softened butter, 1/4 cup hot milk or water. Mix well.
